Falafel (3+4)

Falafel comes from Persian cuisine which is one of my favorites. Falafel is usually deep fried but this recipe is a baked version of it. You can have falafel either as a main meal or just as an appetizer.

Most commonly it is served in pita bread with vegetables and tahini sauce. It is also great in combination with some light vegetable salad and together with hummus it creates a perfect combination which you will fall in love with.

What you need and how to make it

Ingredients

  • 250 g of chickpea soaked over night
  • 1 onion
  • 3 cloves of garlic
  • 1/2 cup of fresh coriander
  • 1/4 cup of flour
  • 1 tsp of ground cumin
  • 2 tsp of ground coriander
  • 1/2 tsp of chilli powder
  • 1 Tbsp of lemon juice
  • salt
  • pepper

Preparation

 

  1. Roughly chop the onion and coriander and put it to a bowl.
  2. Add the garlic, flour, ground coriander and cumin, salt and pepper and process with hand mixer so that the ingredients are well mixed.
  3. Afterwards add the chickpea and process again until only small chunks of chickpea remain and the ingredients are spread evenly in the mixture.
  4. Form small patties and put them on a greased baking tray.
  5. Bake in the oven on 200 °C for about 10 minutes on one side. Afterwards turn the falafels and bake for additional 10-15 minutes or until golden.
