Olive Bread (4+5+6)

I came across this recipe here (there are some really nice recipes) and the bread is absolutely fantastic! I skipped some steps but in the end it turned out great. Half of it disappeared already during the lunch :).

What you need and how to make it

Ingredients

  • 100 g pitted and chopped black olives
  • 100 g pitted and chopped green olives
  • 500 g wheat flour
  • 1 tsp salt
  • 2 cloves garlic
  • 1 tsp rosemary
  • 1,5 tsp chilli flakes
  • 1 tsp thyme
  • 1 yeast
  • 1,5 cup of water

20 min for prep
2 hours rising
1 hour baking

Preparation

  1. In bowl mix flour, salt, rosemary, chilli flakes and thyme.
  2. Dissolve the yeast in 1/2 cup of water and add it to the bowl.
  3. Add one more cup of water, crushed garlic and mix into a dough.
  4. Add the olives and mix well. Afterwards grease the bowl with olive oil (or you can put the dough into a separate greased bowl). Cover the top with plastic wrap and let rise for about 2,5 hours.
  5. Put the dough on a floured surface and flatten with hands into an oval shape. Roll it and shape it into a ball and turn it upside down. Cover it with a clean towel and let it rise for an additional 30 min.
  6. In the meantime turn on the oven to 240°C and put the bread pan into the oven to heat up. Put the dough into the bread pan and bake for about 1 hour.

Let the bread cool down before serving.
