Hummus (3+4)

Very few foods which come from the middle east are so well known like hummus. It is a perfect spread, which you can prepare very quickly and you’ll love it.

If you want to try out some other variations of it, then go ahead and try one of the versions shown in the video at the end of this recipe.

Here’s the basic recipe inspired by Jamie Oliver we use at home.

What you need and how to make it

Ingredients

  • 2 x 400g cans of chickpeas (reserve the liquid and a few chickpeas for decoration)
  • 4 tsp tahini
  • 2 cloves of garlic
  • 1 tsp sea salt
  • 6 tbsp quality extra virgin olive oil
  • 3½ tbsp freshly squeezed lemon juice
  • coriander or parsley leaves (optional)

Preparation

  1. Put rinsed chickpeas in food processor.
  2. Add crushed garlic, tahini, salt, lemon juice, 7 tbsp of the reserved liquid from chickpeas and olive oil.
  3. Blend everything until smooth.
  4. Put the ready hummus in a bowl, drizzle with some extra olive oil and decorate with coriander or parsley leaves.
